Chef Joe wants something very special for the PDAC 2017. Welcome to One King West Hotel and Residence.
We smoked the Tomahawk steak 4 time with the mini smoker and Ziploc bags. It really worked well, small space smoking gave this steak really great aroma of hickory.
To add some dimension chef Joe toasted some black peppercorns and crushed it to go around the steak as a rub. This went on the open flame grill to get it’s beautiful grill marks and then straight into the oven to a temp of 135°F
Fire roasted cherry tomatoes, chared garden asparagus and delicately roasted the whole Ontario garlic bulbs.
This was accompanied by Yukon Gold mash and red wine jue.
Are you ready to shoot it down ?
